Easy Avocado & Egg for Breakfast
CAMPSITE AVOCADO & EGG BREAKFAST

Avocados stuffed with eggs may not be your typical camping breakfast, but this easy recipe is a great option to spice it up a notch, and impress your hungry campsite crew.
- 4 Avocados
- 8 Eggs
- 1 Red Bell Pepper, diced
- 1 Large Tomato, diced
- 1 Serrano Pepper, diced
- Salt & Pepper to taste
- 1/2 teaspoon Paprika
- Optional: Your favorite Hot Sauce
Set your FireDisc to medium high heat. Slice the avocados in half and remove a small amount of the avocado from the center.
Crack the eggs and pour out some of the egg white. Next pour the remaining egg into the center of the avocados.
Add diced vegetables over the top and carefully place the filled avocados into the center of the FireDisc open side up. Season the completed avocados with salt, pepper, and paprika.
Cook for 15 minutes and then remove them from your FireDisc.
Allow to cool for a minute or so, serve and enjoy!
